Whole roasted cauliflower and broccoli – air fryer


Like cauliflower and broccoli but hate the prep and mess? This one is for you and a Dr. Dan favorite.
Start with a whole cauliflower or broccoli and only trim the stem to the base of the florets for cauliflower. For broccoli just remove leaves and cut only the amount of stem needed to clear the top of the air fryer. Wash and pat dry. Drizzle olive oil over the crown and massage in. Place upside down in an aluminum or silicone pan and drizzle more olive oil. Sprinkle with Parmesan cheese (please grate it yourself, not the pre-grated stuff).


Air fry 400 deg for 12 minutes for cauliflower, or 7 minutes for broccoli. The broccoli is done. The cauliflower can be eaten as is, finished as below, or covered and stored in refrigerator for up to a week. To finish the cauliflower, place it in a pan crown up this time. Drizzle with olive oil and sprinkle with parmesan cheese. Another 12 minutes in the air fryer at 400 deg and you’ve got a crispy outside with soft warm stalks. An alternate (shown in photo) is cauliflower for 8 minutes at 450 degrees.
