Start with soy and corn free or high Omega3 eggs if you can, or consider pasture raised organic eggs as second choice. Please don’t use standard eggs from chickens fed regular corn and soy.
Sparkly clean stainless or cast iron for this one. A nonstick pan will not withstand the heat and likely leach chemicals into your food.
Start the heat medium-high and wait. When little droplets of water ball up and “dance” across the pan, it is ready. Lower the heat to medium and add a generous amount of olive oil.
Add the egg to the pool of olive oil and just wait. Leave it alone. Gradually turn the heat back up to medium-high. If the oil gets absorbed by the egg then drizzle fresh oil around the edges. Wait. Wait. Wait.
Once you see the edges caramelize and start to curl up gently work a steel spatula under the egg if needed. Add more oil around the edges if too dry. The egg will pop off the bottom usually leaving nothing behind. Plate, season and enjoy. These are so easy and delicious.
Clean the pan while hot and use Borax or Barkeepers friend as need to return to sparkly clean. Always keep stainless perfectly clean so that it cooks properly and doesn’t stick. Hot pan, cold oil will keep the food from sticking.
