All you veggie lovers out there, this section is for you! I sometimes make a meal consisting entirely of vegetables, fermenting them and pressure-cooking whatever cruciferous vegetables I find at the market. The problem with vegetables is when they’re raw. Plants have a defence mechanism to avoid being eaten. All plants contain various types of lectins. Some vegetables contain so many lectins that they cannot be detoxified. However, most can be rendered harmless through pressure cooking, steaming, or fermentation. When you first start, please avoid eating raw vegetables. I purposely overcook vegetables to make them easier to digest. If you want to learn more about lectins, watch Dr. Bikman’s video. Once your gut has been reset and is functioning well, you can try eating some raw vegetables to see how you feel.

If you love a certain vegetable and know that you can tolerate it, you can use only that vegetable. Otherwise, keep it reasonably simple and have a selection. I’ve found that broccoli, Brussels sprouts, and cabbage work well with my system. Dr. Gundry has a recipe for cabbage soup, which is also a good option.

You can add seasonings such as salt, pepper and turmeric. Add some quality olive oil for fat. The idea is to keep it simple and give your gut a chance to heal. If you feel great after a week, you can start adding a protein source. I suggest starting with salmon or sardines.
