Although vacuum sealers are not mandatory, they are highly recommended. They make sous vide cooking much easier and allow you to portion meat and freeze it for easier cooking later.

This is pure luxury. Frozen fruit yogurt made from in-season fruit is a real treat.
Also in the “fun to have but not necessary” category is a popcorn popper. However, I don’t use it for popcorn; I use it to pop sorghum seeds! I traded lectin-loaded popcorn for popped sorghum. I’m totally hooked on it, and it’s a healthy food. I would choose a stainless steel model over an aluminum one.
