Kafta
Kafta also sometimes spelled Kofta, is a Lebanese style spiced ground meat. It can be made with nearly any ground meat. I’ve used ground lamb and ground bison. These are A2 protein meats with lower inflammatory profiles than standard beef, but grass-fed ground beef would work also.
This easy to make and and easy to eat protein reheats perfectly in the air fryer.
Ingredients:
2-2.5lb (1 Kg) of ground meat (beef, lamb, bison, elk etc)
1 whole bunch Italian parsley, rough or fine chopped
1/2 cup Pork Rind Panko
1 tablespoon 5 spice powder
1 teaspoon salt
1 teaspoon onion powder
ground pepper
optional (and fun) 1 teaspoon Scotch Bonnet pepper
Start oven at 375F (190 c)
Mix everything together by hand. Try not to over mix. The goal is to incorporate and spread the flavors without mashing the meat. Make little sausage size logs, like fat little cigars. You can put a wood skewer through them or not.
Place on a baking pan lined with parchment paper.
bake for 20 minutes in the middle rack. Remove from oven and turn oven off.
Put them on a wire rack inside a pan.
Put them back in the oven on the top rack.
Set oven to Broil and turn on for 4 minutes.
Done. Eat them plain, add a mustard, wrap inside a lettuce leaf, break up and put in your salad. So many ways to enjoy Kafta. Refrigerate your planovers and reheat in air fryer for 3-4 minutes for a quick protein meal.
