Crispy Eggs – Beef tallow fried

Start with soy and corn free or high Omega3 eggs if you can, or consider pasture raised organic eggs as second choice. Please don’t use standard eggs from chickens fed regular corn and soy.

Use a sparkly clean stainless steel pan. Nonstick pans are often scratched and likely leach chemicals into your food.

 

Start the heat medium and add one tablespoon beef tallow and one tablespoon butter on top of the tallow. When the butter is bubbling and has released most or all of the water its hot enough.

Add the egg to the pool of oil and just wait. Leave it alone. Wait. Wait. Wait.

Once you see the edges caramelize, curl up, and the whites develop bubbles, use a spatula or fork to release any stuck areas. The egg will usually pop off the bottom, leaving nothing behind. Plate it, season it, and enjoy! These are so easy and delicious! Want even more nutrition? Drizzle with fresh olive oil.

 

Clean the pan while it is still hot. Use borax or Bar Keepers Friend as needed to make it sparkle. Keep stainless steel clean to ensure proper cooking and prevent sticking.
